What Cara Brotman Eats in a Day 2026
Cara Brotman, who ran 3 raw vegan restaurants in the 90s and early 2000’s is 57, feeling amazing and in the best shape and health of her life. Her diet is plant based mainly raw vegan and has upped her protein intake lately because middle aged women need more protein as they age, plus the fact that Cara works out heavily at the gym doing resistance training, weight training and stays active all day long. She has no weight gain or menopause issues making her an inspirational roll model for missle aged women. Crunchy Thai Edamame Salad with Citrus Sesame Dressing
Dressing
3 tablespoons cashew cheese
1 tablespoon fresh lemon or lime juice
1 tablespoon fresh orange juice
1/2 teaspoon soy sauce
1 1/2 tablespoons maple syrup
1 tablespoon toasted sesame oil
Whisk all dressing ingredients together until smooth and creamy.
Salad
Shredded red cabbage
Cubed tofu
Shelled edamame
Thinly sliced red bell pepper
Lots of green onion, sliced
Lots of fresh cilantro, chopped
Several cloves garlic, minced
Fresh ginger, minced
A little jalapeño, minced (optional, for heat)
Instructions
Add the cabbage, tofu, edamame, red pepper, green onion, cilantro, garlic, ginger, and jalapeño to a large bowl.
Pour the dressing over the top.
Toss well until everything is evenly coated.
Finish with a generous sprinkle of black and white sesame seeds.
